Try these delicious steak tacos with vibrant mango salsa for a real treat!
Ingredients
1 tbsp (15 mL) vegetable oil
1 pkg Old El Paso™ Taco Seasoning Mix
1 beef flank steak (about 1 1/4 lb/625 g)
8 Old El Paso™ Medium Flour Tortillas (from 12 count package)
2 ripe medium mangoes, seed removed, peeled and diced
Juice of 1 medium lime
1 jalapeno chili, seeded, chopped (if desired)
1/4 cup (50 mL) chopped red onion
1/4 cup (50 mL) chopped fresh cilantro leaves
Instructions
Heat oven to 400°F. Line cookie sheet with foil and set aside for the beef flank steak.
In 10-inch skillet, heat vegetable oil over high heat. Sprinkle pkg Old El Pasoᵀᴹ taco seasoning mix evenly over the beef flank steak, pressing to coat all sides. Brown steak in the hot oil on both sides until well seared. Transfer the browned steak to the prepared cookie sheet. Roast until a meat thermometer inserted in center of steak reads 135°F. Remove from oven, and let rest 10 minutes so juices redistribute.
Meanwhile, in large bowl, mix salsa ingredients: diced ripe medium mangoes, juice of 1 medium lime, finely chopped jalapeno chili, chopped red onion and chopped fresh cilantro leaves. Stir to combine well, then refrigerate until ready to serve so flavors blend and salsa stays chilled.
After resting, cut steak into thin slices across the grain. Warm tortillas if desired, then place 2 or 3 slices steak on each tortilla. Spoon some chilled mango salsa over the steak. Roll up tortillas and serve immediately.
