Pico de Gallo

One of the most rewarding parts about meal prepping on Sunday is all the work for Taco Tuesday is already done! This is so helpful for the busy family who has to get to soccer, basketball or hockey right after dinner. We have broken the habit of eating out, almost completely, thanks to meal prep Sundays. One of our favorite toppings for anything we eat on Taco Tuesday is pico de gallo. It is so fresh tasting and simple to make. Added bonus of making it on Sunday is the flavours marry and creates a more flavourful topping for Tuesday.

Ingredients

  • 4 tomatoes seeded
  • 1/2 large red onion
  • 1/4 Cup chopped cilantro
  • 1 jalapeno pepper chopped seeds removed
  • 2 limes juiced
  • Salt to taste

Preparation

  • Chop the seeded tomatoes and onions so they are smaller than bite-size.
  • Add the juice of the limes. Mix in the chopped cilantro and jalapeno.
  • Add salt to taste.
  • Place in fridge for at least an hour. Enjoy!
