Mexican-Spiced Sweet Potato Bites

- 1 large orange-fleshed sweet potato, peeled (about 1 lb/500 g)
- 1 tablespoon (15 mL) cornstarch
- 1 tablespoon (15 mL) vegetable oil
- 1 tablespoon (15 mL) from 1 container (177 g) Old El Paso™ Taco Seasoning Mix
- ¾ cup (175 mL) shredded Cheddar cheese
- 1 medium avocado, pitted, peeled and diced
- 1 tablespoon (15 mL) finely chopped red onion
- 2 teaspoons (10 mL) fresh lime juice
- 2 tablespoons (30 mL) chopped fresh cilantro leaves
- ¼ teaspoon (1 mL) salt
- 16 thin slices fresh jalapeño chilies
- 2 tablespoons (30 mL) roasted pepitas
Preparation
- Heat oven to 425°F (220°). Line 18x13-inch (45x33 cm) rimmed pan with foil; spray with cooking spray.
- Cut sweet potato crosswise into ¼-inch (6 mm) slices (about 16). In medium bowl, toss potatoes with cornstarch until completely coated. Drizzle with oil; stir to coat. Sprinkle with taco seasoning mix; place in single layer on pan.
- Bake 15 minutes; turn, bake 10 to 15 minutes longer or until browned. Remove from oven; top each slice with Cheddar cheese. Return to oven 1 to 2 minutes or until cheese is melted.
- Meanwhile, in small bowl, coarsely mash avocado with fork; stir to chunky texture. Add red onion, lime juice, cilantro and salt; stir to combine.
- To serve, top each potato slice with slightly less than a tablespoon guacamole; garnish with jalapeño chili and pepitas.
Expert Tips
- Try to purchase a large, long sweet potato from the bin. The number of slices could vary, but the guacamole topping should not have to be adjusted.
- Want more toppings? Try a little sour cream or fresh cilantro.
- To dice the avocado, cut it in half lengthwise, top to bottom, by scoring all the way around down to the pit. Open the avocado by twisting each half in opposite directions and remove the pit. Using a large spoon, scoop the flesh from the skin. Place one avocado half cut-side down on a cutting board. Make two horizontal cuts to make three planks, then cut the planks lengthwise into strips. Turn 90 degrees, and cut again. Repeat with the other avocado half.
